Nothing makes me happier than Peanut Butter and Honey, except maybe chocolate.. yes.. chocolate makes me happier. However, this combo is pretty darn good too. So to satisfy my sweet chocolate tooth I have combined all of my loves together and included a lovely chocolate drizzle to these sweet, crunchy bites. I actually had a conversation with my mom about who came up with the PB&J combo (I mean, genius)… but we have yet to talk about who came up with PB & Honey!! That being said, I am pretty sure anything combined with peanut butter is simply delicious.
In all of my healthier recipes I use organic, just peanuts, peanut butter. However, I find that sometimes the it can be on the dry side, so the honey really adds to the moisture and is the perfect amount of sweetness needed to brighten it up. I use Creamed Honey by Peace River Organic, it is delicious!
I love PB, I love the sweetness of honey, I love a touch of chocolate and I love crisped rice… so, why not throw that all together in a SUPER SIMPLE recipe! Enjoy Momma xo
Crunchy Peanut Butter & Honey Bites
Prep Time: 10 minutes
Cook Time: 5 minutes
Freeze time: 15 minutes
Total Time out of your life: 30 mins
Makes: just depends on the size of your bites
- 1 Cup Crispy Rice (I used Organic Nature’s Path)
- 1/2 Cup Peanut Butter
- 1/4 Cup Honey
- Optional: 1/4 Cup Dark Chocolate Chips
Instructions:
- Place your Crispy Rice in a medium size bowl.
- Using a small pot, warm up your peanut butter on the stove at medium-low heat. Keep stirring to soften the peanut butter.
- Add in the honey and stir to ensure you are not burning the mixture.
- Once fully combined and smooth, remove from heat and allow to cool for 2 minutes.
- Pour your PB & Honey mixture into your crispy rice bowl and stir around until fully combined.
- Roll into balls, approximately 1 tbsp each.
- Pop in the freezer for around 15 minutes to make them nice and solid!
OPTION ONE: - When they’re ready take them out, let thaw for a moment, and enjoy the lovely crunch…
OPTION TWO: - If you’re feeling adventurous, you can drizzle more honey on top and roll in some peanut flour…
OPTION THREE (MY CHOICE) - Complete option two and then drizzle dark chocolate on the bites… perfection.
* If you prefer for your bites to be more crunch and less PB & Honey- use 1.5 cups of Crispy Rice instead.
