8 Weeks Pregnant

Hello Momma, welcome to Foodie Friday! 

I’m not sure about you but at this point in my pregnancy I was preoccupied with finding foods that I could put into my body, with the main goal of not feeling sick afterwards. In the first trimester, it was all about prepping whenever I had higher energy days and freezing the snacks to last longer. The easiest snack for me to do that with was energy balls. When I had some extra energy, I would recipe test. I would try different recipes that were not only tasty, but substantial and easily stored. This recipe is for those who are into chocolate and peanut butter, with a touch of honey, I feel like I only know one person in my world who isn’t into chocolate and peanut butter.. and I will never quite understand them. I would have these snacks at my bedside for emergency situations, like a first thing in the morning snack or middle of the night pee break snack. I needed to have go-to snacks on hand at all times, especially at my bedside. My husband would wake up for work at 5am and I could never manage to sleep through it. So, I would need an immediate snack ☺ Something about hunger first thing in the morning really made me sick. It took me a few tries before I realized that, when nauseas, eat something. Basically, the opposite of what my brain and body usually tells me to do, but it was the only way to feel better. So here is a tasty treat, that I not only enjoyed during the first trimester but carried through my whole pregnancy, postpatrum and still gift as little snacks for my momma friends.

Cash Creations: PB & Chocolate Chip Oat Balls 

Total Time out of your life: 20 mins
Makes approx. 10 Balls 

Ingredients: 

▪  1 cup of Oats
▪  1 cup of Peanut butter*
▪  2 tbsp Maple Syrup**
▪  1 tbsp Honey***
▪  1/2 cup mini chocolate chips (Pascha 100% dark chocolate)
▪  1/2 cup ground flax
▪  1/2 cup flaked unsweetened coconut
▪  Pinch of sea salt 

Instructions: 

In a medium sized bowl, mix together oats, flax, sea salt and coconut. Set aside. In another bowl, mix peanut butter, maple syrup and honey. Pour your dry ingredients into your wet, and mix thoroughly. Fold in your chocolate chips (best part). 
Using a TBSP ice cream scoop (or a spoon if you don’t feel like being all fancy), scoop out TBSP size balls and roll them in your hands. Place in an airtight container and pop in the fridge or if you’re storing them, place them in the freezer! 

* I use organic, just peanuts, peanut butter
** Can reduce or skip if you don’t want to much sweetness
*** I use organic creamed honey… there is just something so delicious about creamed honey. 

I often double or triple this recipe because I like to have these babies on hand at all times, and easy access to my freezer stash.
